Bites

Crisp and golden brown on the outside and naturally sweet on the inside, these Banana Pancake Bites are a breakfast or snack option you will 'go bananas' over! These are a family friendly finger food option that is fun to eat, nutritious, and easy to make. I pair these bites with a creamy cinnamon-yogurt dressing which makes these even more crave-worthy. Pancake Bite Ingredients: 
  • 1/2 cup pancake batter ( I used Kodiak Cakes high protein flapjack mix)
  • 1 banana, 1/2 inch thick slices
  • Cooking oil
  • 1 tbsp. crushed walnuts for a topping or your choice of nuts/seeds
Yogurt dressing
  • 2 tbsp. yogurt
  • 1 tbsp. honey
  • Dash of cinnamon
Instructions:
  1. Coat skillet with oil, bring to medium heat. 
  2. Dip each banana slice individually in the pancake batter and coat all sides.
  3. Place each slice of coated banana on the heated pan. Cook on both sides on low-medium heat until golden brown.  Add oil if banana slices are sticking to the pan. Once done, toss the banana slices onto a serving plate.
  4. For the dressing, mix the yogurt, honey, cinnamon in a small bowl and drizzle over the banana slices. Sprinkle over walnuts & enjoy while the banana pancake bites are warm!
Recipe Notes:
  • If you do not prefer a yogurt dressing, you can enjoy the bites with peanut butter, chocolate dip, or just on its own. 
  • If you don't like bananas, you can try this recipe with strawberry slices or peaches.
