  • 1 large dragon fruit, white flesh

  • 1/2 lime

  • 6 fresh mint leaves

  • 1/3 cup strawberries, chopped

  • 1/3 cup blueberries

  • 1 small mango, chopped

  • optional: unsweetened coconut flakes

  1. Slice the dragon fruit in half.  Scoop out the flesh with a small ice cream scoop.  If you don't have a small ice-cream scoop you can just scoop/chop it as you like until the flesh is entirely cleaned out of the dragon fruit shell.

  2. Combine & toss all of the chopped fruit into the dragon fruit shell and decorate with mint leaves.

  3. Lastly, squeeze the lime juice into each dragon fruit bowl and enjoy! You can sprinkle over unsweetened coconut flakes as well.
