Inspired by my favorite Panera Bread sandwich, Mediterranean veggie, takes just 5 minutes to make and is absolutely delicious! I love to re-create foods that I enjoy from restaurants at home especially if the ingredients include most of my usual pantry staples. I have put my own twist by adding seasoning and jalapeños to add a spicy kick instead of the sweet Peppadew peppers in Panera's sandwich. I also have chosen a fiber-rich sprouted bread for this recipe. The best part is, this sandwich tastes just as yummy as the Panera one for half the price. I always make this no-cook sandwich to use in bento box lunches for busy days along with a serving of fruit and nuts which makes a balanced meal!
