If you are looking for a quick and simple lunch idea, these Mediterranean Pita Pockets are a perfect pick! The combination of fresh veggies, pre-made protein sources, and creamy hummus makes this meal super convenient and balanced.  I usually create these pita pockets by eye-balling all ingredients and tossing in various flavor add-ons like hot sauce and pickled veggies.
