Mushroom &
Jalapeño Omelette

Breakfast, brunch, or even a last minute simple breakfast for dinner option, this jalapeno and mushroom omelette is a recipe I can always rely on to be delicious and filling. This omelette can be an easy way to get protein and a dose of veggies in your day.  For this recipe, I like to saute the onions and mushrooms in some spice before adding in the eggs which is a way to enhance the flavor. I never knew what a great pair mushrooms and jalapenos can be until I tried this omelette.  Grab the easy recipe below!
Mushroom & Jalapeño Omelette Recipe

 Ingredients: 
  • 2 eggs
  • 2 white mushrooms
  • 1/2-1 jalapeño (depends on how spicy you want the omelette to be)
  • 1/2 small onion
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/4 cup of cilantro
  • oil
Instructions:
  1. Wash and chop the onion, jalapeño, and mushrooms.
  2. Heat 1/2 tbsp. of oil in a pan and toss in the onions and mushrooms along with some of the black pepper and chili powder. Sauté on medium to low heat until the onion and mushrooms start to turn a bit golden brown. If you notice the onions burning or sticking to the pan, add a little more oil. Turn the heat to low.
  3. Stir 2 eggs in a bowl with the garlic powder, rest of the chili powder, salt, and black pepper. Pour the egg mixture over the sautéed mushroom and onions. Sprinkle over fresh cilantro. Cook egg on both sides until golden brown.
