Zucchini
Fritters
Crispy and flavorful, these zucchini fritters can be an irresistible snack or appetizer that even a non-veggie lover will enjoy! This recipe is inspired by one of my favorite Pakistani and Indian snack called pakoras which are deep fried fritters made with gram flour, various veggies and spices. The fritters can be batch-cooked for weekly lunchbox add-ins or a nourishing midday snack.
Chickpea flour also known as gram flour or besan, is packed with fiber and protein. Just 1 cup of gram flour contains 21 grams of protein and 10 grams of fiber. Along with gram flour, these fritters include freshly grated zucchini along with spices like ground cumin, coriander powder, chili powder and more. After being lightly pan-fried, they turn out deliciously crispy on the outside with a tender center. Served with chutney or your favorite dip, you'll be craving these easy zucchini fritters all week.
Spiced Zucchini Fritters

Ingredients:

1/2 cup besan or gram flour( made from chickpeas)

1 egg, whisked

1/4 tsp. black pepper

1/4 tsp. chili powder

1/4 tsp. coriander powder

1/4 tsp. ground cumin seeds

1 tbsp. dried fenugreek leaves
-
1/4 tsp. turmeric
-
1/4 tsp. salt
-
1/4 tsp. baking powder
-
1/2 tsp. ginger & garlic paste

1 small zucchini, grated
-
1/2 tbsp. lemon juice
-
1 tbsp. oil (adjust as needed)
Directions:

Thoroughly wash and dry the zucchini. Cut the ends off and grate the zucchini. Place the grated zucchini into the center of a kitchen towel or paper towel & squeeze out the water.

Stir together, gram flour, all the spices, ginger & garlic paste, baking powder, egg and zucchini. You can mix the batter with your clean hands until all ingredients combine well.

Pre-heat oil in a skillet and use an ice cream scoop to portion out the batter into the skillet at least 1-inch apart. Fry for 2-3 minutes on each side or until golden brown. Drizzle over some lemon juice on each fritter as they cook.

Enjoy fresh off the skillet with dip of your choice(ex: Tzatziki sauce, hummus, chutney, yogurt, etc.)
Recipe Notes:

You can store these in the refrigerator for 3-5 days in an airtight container or freeze for later. Reheat on a lightly greased skillet for best results.
