As the weather gets warm and the sun gets brighter, I start to crave hydrating and fruity drinks. This Strawberry Lime Cooler is the perfect drink to enjoy all spring and summer long. The sweet strawberries, tartness from the lime, fresh mint, and icy cold sparkling lime water is really the most refreshing combination. I love adding chia seeds to fruity drinks since they are great source of soluble fiber which supports gut health, provide omega 3 fatty acids, and are rich in antioxidants. Chia seeds also act like a sponge and absorb water to keep you hydrated and full.  
 
 
 
To make this drink, you simply combine blended strawberries with sparkling water, toss in some chia seeds, garnish with fresh mint leaves and lime. This drink is the best compliment to your lunch meal. It can also be a perfect drink to serve at your next backyard BBQ or picnic. I personally love to lounge on my front porch on a hot summer day with a book in one hand and this Strawberry Lime Cooler in the other!
Strawberry Lime Cooler Recipe

Ingredients: 
  • 1 cup strawberries, sliced

  • 4 slices of lime 

  • 1 cup lime sparkling water(sugar-free), chilled

  • 1/2 cup ice 

  • 5 mint leaves 

  • 1 tbsp. chia seeds

  • Optional: sweetener( 1 tsp. honey or a  sugar free drop of stevia or monk fruit)

Instructions:
  1. Blend the strawberries until smooth.

  2. Divide the blended strawberries into two drinking glasses. Add 1/2 cup sparkling water, 1/2 ice, 1/2 tbsp. chia seeds to each glass.  Stir and garnish with lime slices and mint leaves.
