Strawberry Parfait
Bites

Chocolate dipped strawberries are hands-down one of my all time favorite treats. But to enjoy on the regular, I have fallen in love with these nutrient packed yogurt-dipped strawberries. All you need are strawberries, nuts, yogurt and a few minutes of your time to create this treat I call Strawberry Parfait Bites. Strawberries are a hydrating fruit that also provide fiber and vitamin C. This snack can be very satiating especially because I prefer using Greek or Icelandic style yogurt since they have a higher protein content. I particularly used Siggi's dairy plain yogurt for this recipe which has 17g of protein per 5.30 oz. This is such a perfect snack for both kids and adults to enjoy in the warm weather!
Strawberry Parfait Bites Recipe

Servings: About 6 servings (2 strawberries per serving)

Total Time: 10 minutes (not including freezer time)

Ingredients:

3/4 cups of plain Icelandic or Greek style yogurt

1/2 cup chopped walnuts, pistachios, almonds, unsweetened coconut flakes (you can choose 1 or a combination)

12 large strawberries

1 tsp. vanilla extract

Directions:

Wash and thoroughly dry the strawberries.

Place vanilla extract and yogurt in a bowl and stir to combine.

Dip each strawberry in the yogurt until they are 1/2 or almost fully coated. You can use a spoon to smoothen/even out the yogurt on the strawberry. Place these strawberries on a tray lined with parchment paper.

Chill in the freezer for about 1 hour & enjoy!

Recipe Notes:

To make dipping a bit easier, you can insert a regular fork or small cocktail fork on the leafy end of the strawberry

To make this recipe vegan, you can use any dairy-free yogurt.

You can store extra in an air-tight container in the freezer.
