As the weather gets cooler, many of us tend to shift toward comforting indoor activities like munching on some comforting snacks while watching some seasonal movies. These vegetarian loaded baked nachos are a delicious and easy movie night snack that will leave you and your family asking for more. Crunchy tortilla chips are topped with shredded cheese, black beans, jalapeños, salsa, along with colorful veggies like tomatoes and bell peppers.
These nachos are loaded with fiber from the veggies and tortilla chips and packed with protein from the beans and cheese. You can customize these loaded nachos with any type of cheese, veggies, and protein you have on hand. Canned beans are a pantry staple for many but you can also swap in ground beef and pre-cooked chicken that you have on hand for a non-vegetarian version.
