These vegetarian loaded baked nachos are a delicious and easy movie night snack that will leave you and your family asking for more. Crunchy tortilla chips are topped with shredded cheese, black beans, jalapeños, salsa, along with colorful veggies like tomatoes and bell peppers.
These nachos are loaded with fiber from the veggies and tortilla chips and packed with protein from the beans and cheese. You can customize these loaded nachos with any type of cheese, veggies, and protein you have on hand. Canned beans are a pantry staple for many but you can also swap in ground beef and pre-cooked chicken that you have on hand for a non-vegetarian version.

Ingredients:

About 4oz tortilla chips ( I used Siete Foods blue corn organic chips made with avocado oil: 15% discount link here!)

1 cup shredded cheese

1 bell pepper, diced

1-2 fresh tomatoes, diced

1/2 small onion, diced

1-2 jalapenos, chopped

1/2-1 cup of canned black beans ( Optional: mash for creaminess) 15% off link here for vegan mashed Siete Foods black beans made with avocado oil

1/2 cup salsa

Fresh cilantro
Directions:

Pre-heat oven to 350 degrees F.

Spread tortilla chips on a small baking dish. Top tortilla chips with beans, cheese, jalapeños, and chopped veggies.

Baked for about 10 minutes or until cheese melts and beans heat up.

Top baked nachos with fresh salsa and garnish with cilantro. Serve immediately!
