I adore my mini waffle maker.  From grilled cheese to crispy potato waffles and these veggie loaded egg omelettes, it has so many delicious uses! What I love most about making omelettes in my waffle maker is that they cook so quick and turn out fluffy. You can also customized the recipe with whatever veggies, spices,  and cheese you prefer. These are also perfect for kids-you can use different waffle maker shapes. I like to enjoy these waffles with a drizzle of hot sauce and a side of whole grain toast and fresh fruit for a balanced breakfast.

Waffle Omelette Recipe
Servings: 2 
Prep Time: 5 minutes 
Cook Time: 5 minutes
Total Time: 10 minutes

 Ingredients: 
  • 2 eggs
  • 1 cup of finely chopped veggies of your choice ( I used red onions, mushrooms, bell peppers)
  • 1/3 cup shredded cheese of your choice(I used cheddar)
  • Spices of your choice (I used a dash of salt/pepper, 1/4 tsp. chili powder, 1/4 tsp. garlic powder, sprinkle of dried parsley and chili flakes)
  • Toppings of your choice: hot sauce, fresh herbs, optional 
Instructions:For a mini Dash waffle maker. Adjust if you have a larger waffle iron. 
1. Preheat your waffle iron then spray some oil to coat the top and bottom section of the iron.
2. Mix all the ingredients in a bowl except for the toppings. Mix well with a fork. 
3. Add half of the mixture to the waffle maker and close. Try not to overflow. 
4. Close the waffle maker for about 4-5 minutes or until golden brown.  You can open and check to see if the egg is cooked through.
