A little outdoor or indoor tea party can be a perfect way to bond with your mom this Mother's Day. My mom and I always have shared the best laughs, stories, and life lessons while enjoying evening tea with a side of finger sandwiches. It's a time where we forget about our busy lives and become more present and relaxed. 

If you want to plan a tea date for your mom, brew up her favorite tea and pair it with this easy whipped feta sandwich. It is an easy and flavorful twist on the classic cucumber tea sandwiches and takes just 10 minutes to make- no cooking required.  The creamy feta spread along with the crunchy fresh cucumbers is such a light and fresh snack to enjoy with your afternoon or evening tea. These are also perfect for bridal showers, baby showers, brunch, or a midday picnic at the park. Grab the recipe to enjoy with your loved ones!

Whipped Feta and Cucumber Tea Sandwiches

Servings: About 3 Sandwiches

Ingredients

  • 1/3 cup crumbled feta

  • 2 heaping tbsps. of plain nonfat yogurt or Greek yogurt

  • 2-3 tbsp. whipped cream cheese

  • 1 tsp. olive oil

  • 1 tbsp. fresh or dried herbs

  • 1 tsp. chili flakes

  • 2 Persian cucumbers, chopped

Directions

  1. Blend the feta, cream cheese, olive oil, yogurt until almost smooth. Add a bit of yogurt/cream cheese if you want the spread to be creamier. 

  2. Stir in herbs and chili flakes.

  3. On a slice of bread, spread a layer of the whipped feta and add a layer of cucumbers on top.  Add another slice of bread on top to make a sandwich. You can cut the sandwich in 1/2 or other shapes with a cookie cutter.
