These No-bake Power Bites are just the PERFECT nourishing quick snack that provides a dose of fiber, healthy fats, and protein! The combination of oats, peanut butter, cinnamon, and chocolate chips can really help satisfy sweet cravings as well. These are a minimal effort grab-and-go snack option that you can get creative with. Recently, I decided to throw in some Vital Proteins collagen powder into the recipe since their collagen products are so versatile and can be mixed into meals, drinks, and snack recipes like this one!
No-Bake Power Bites Recipe
Servings: Makes about 16 balls

Freeze Time: 30+ minutes

Ingredients:

1 cup organic old-fashioned oats

1/4 cup unsweetened coconut shreds/flakes

1/4 cup mini semi-sweet/dark chocolate chips or cacao nibs

1/2 cup unsweetened peanut butter or any other nut/seed butter of choice

1 tsp. ground cinnamon

1 tsp. vanilla extract

A scoop of collagen powder(optional)
Directions:

Toast the oats and coconut on a pan with a tiny bit of oil until slightly golden brown.

Combine the cinnamon, vanilla, nut/seed butter, and collagen(optional) together and stir until these ingredients are mixed evenly together.

Toss the toasted oat/coconut mix (after it cools down a bit)into the ingredients from #2 and stir everything together well. Gently fold in the mini chocolate chips.

Scoop out the mix with a small ice-cream scoop/spoon and mold them into balls with your hands. Then, place them onto parchment paper and let these chill in the freezer for 30+ minutes & enjoy!
Recipe Notes:

You can store these bites in an airtight container in the fridge for 1-2 weeks and in the freezer for longer.

To make these bites dairy-free use cacao nibs, dairy free chocolate, or eliminate this ingredient.

You can swap peanut butter with other seed/nut butters like almond, sunflower, etc.
