Triple Berry 
Chia

Have some berries on hand that are not spoiled but are becoming soft and wilted? Don't toss them out! Instead, try to make this delicious simple and fresh chia jam.  Mixing chia seeds with a mix of berries, lemon juice, and a natural sweetener makes the perfect topping for overnight oats, toast, waffles, yogurt, and more. It can also add a dose of nutrition since chia seeds provide a dose of fiber and heart healthy omega 3 fats. Try out the 10-minute recipe below!

Triple Berry Chia Jam

Servings: 2-4 

Prep Time: 5 minutes 

Cook Time: about 5 minutes

Ingredients

  • 1 cups mixed berries of your choice(I used strawberry, blackberry, blueberry)

  • 1 tbsp. lemon juice

  • 2 tbsp. chia seeds

  • 1 tbsp. honey or maple syrup, optional

Directions

  1. Heat fruit in a saucepan on medium heat, stirring occasionally, until the fruit begins to bubble and cook down. You can mash the berries further using a fork to your desired consistency.

  2. Mix in the chia seeds, lemon juice, and sweetener.

  3. Remove from heat and let it cool. Transfer to a jar. The jam will thicken as it cools down. 

  4. Stir before you serve.

 

Recipe Notes:

  • You can store the jam in a sealed jar in the fridge for about a week or freeze in an ice cube mold for up to 3 months.
