A Little Spring Picnic Menu!

Take along these delicious menu items on little solo picnic or to share with your loved ones!

As soon as May begins, I get into full picnic mode! It’s my all-time favorite way to relax under the sun while enjoying some nourishing and delicious snacks. Cold sandwiches, fresh fruit, and little pastries are my go-to picnic menu choices. They are mess-free, compact, and easy to make in bulk to share.


Recently, I’ve been making a creamy hummus chicken salad sandwich that has become a crave-worthy cold sandwich for picnics. I swapped the mayo in classic chicken salad sandwiches with homemade hummus, making the chicken salad so creamy and filling. Pairing the sandwiches with Greek yogurt parfaits filled with seasonal fruits like kiwi and berries, and mini daisy puff pastries, adds a refreshing touch that’s perfect for the fresh spring and summer air.


Whether you’re picnicking solo at the beach or with your loved ones at the park, these picnic menu items are the perfect finger-friendly options to bring along. Grab your checkered picnic blanket and your woven basket, and fill them with these delightful treats!

Creamy hummus & chicken salad sandwiches

Kiwi berry Greek yogurt parfait cups

Hummus Chicken Salad Sandwiches- 4 servings

  • 2 cups shredded seasoned chicken

  • 1/4 cup finely chopped celery

  • 1/4 cup finely diced red onion

  • 1/4 cup finely diced yellow bell pepper

  • 3/4 cup original hummus

  • 1 tbsp. mustard of choice

  • 1 tsp. dried parsley

  • 1 tsp. garlic powder

  • Salt & black pepper to taste

  • Option, dash of hot sauce and chili flakes

  • 8 Whole wheat bread slices or other bread of choice


Directions: Combine all the ingredients in a bowl, except for the bread. Stir until everything is well mixed. Chill in the refrigerator for about 30 minutes. Once chilled, enjoy making your cold hummus chicken salad sandwiches!


Mini Strawberry Jam Daisy Pastries - Makes about 5 servings


Directions: Place a rack in the center of the oven and preheat to 400°F (200°C). Line a rimmed baking sheet with parchment paper. Lay your thawed puff pastry sheet (thaw according to package instructions) on the lined baking sheet. Use a rolling pin to roll out and lightly even out the puff pastry sheet. Cut out as many daisy shapes as possible with a cookie cutter. Peel off the extra puff pastry and set aside for another use. Brush the daisy shapes with egg wash and bake for about 10-12 minutes or until golden brown. Once baked, set them aside to cool, then poke a small indent in the center of each daisy to add your jam. Enjoy!


Kiwi Berry Greek Yogurt Parfait Cups- 4 servings

  • 4 mini paper muffin liners

  • 1 cup of mixed fruit(chopped kiwi and berries of your choice)

  • Plain Greek yogurt

  • Drizzle of honey

  • Granola, optional


Directions: To each muffin cup, add a dollop of Greek yogurt. Layer your favorite fruits over the yogurt, then add a drizzle of honey. For an extra crunch, sprinkle some granola on top. Enjoy your delightful and nutritious treat!


Little hacks: Add a bag of frozen grapes and/or frozen drinks to your picnic basket. As they thaw over time, they will help keep your food cool. Plus, you'll have chilled drinks and grapes to enjoy as a refreshing snack!

This spring picnic menu looks absolutely delicious and it’s making me so excited for the warmer weather ahead.
